Ingredients (for an 11-inch pizza)

1 of our par-baked sourdough pizza bases (fresh to order)

4–5 tbsp tomato pizza sauce (we recommend Mutti pizza sauce)

125 g fresh mozzarella, sliced (not grated)

150 g mixed mushrooms (e.g., chestnut, button, shiitake), sliced

1 clove garlic, finely chopped (optional)

1–2 tsp olive oil

Sea salt and freshly cracked black pepper

Fresh parsley or thyme leaves (optional, for garnish)
Method

Preheat the oven to 220 °C (200 °C fan) / 425 °F / Gas 7.

Prepare the mushrooms: Toss the sliced mushrooms and garlic (if using) in olive oil, salt, and pepper.

Prepare the base: Place the par-baked sourdough base on a baking tray or pizza stone.

Spread the sauce: Spoon the tomato pizza sauce evenly over the base, leaving a small border for the crust.

Add the cheese: Lay the fresh mozzarella slices evenly over the sauce.

Top with mushrooms: Scatter the seasoned mixed mushrooms over the cheese.

Bake: Transfer to the hot oven and bake for 6–8 minutes, or until the cheese is melted, bubbling, and the crust is golden.

Finish & serve: Garnish with fresh parsley or thyme if desired. Slice and enjoy hot.
Tip
For extra flavour, lightly sauté the mushrooms before topping the pizza - this enhances their earthy taste and prevents excess moisture on the base.
